Easy-to-Make Carrot Apple Muffin Recipe
This carrot apple muffin recipe is easy to make and has become a staple in our home.
I have tried substituting less oil and sugar to make them healthier, but it simply isn’t as good. You can cut back a little on both without sacrificing too much flavor. But the original recipe is by far the best.
Without further ado, here is our favorite carrot apple muffin recipe:
- 2 Cups of all-purpose flour
- 3 teaspoons baking powder
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 1 cup sugar (I like to use turbinado)
- 1 cup vegetable oil
- 3 eggs
- 2 cups of raw shredded carrot
- 1 apple peeled and shredded
- 1/2 cup raisins (optional, and I don’t always use them)
To make the muffins:
Mix the dry ingredients in a bowl (including the flour, baking powder, cinnamon, and salt). Then mix the wet ingredients (sugar, vegetable oil, and eggs). Combine the dry and wet ingredients and gently mix. Add the shredded carrots, apple, and raisins and stir until combined. Add the batter to your greased or lined muffin tins. Bake at 375 for approximately 25 minutes.
